At Stache Chocolate, everything starts with curiosity and a desire to craft chocolate that surprises, delights, and connects.

For more than 25 years, I’ve lived in kitchens from neighborhood bakeries to the world’s most luxurious hotels. Those years shaped how I think about flavor, balance, and care, lessons I now pour into every bar of chocolate.

You may have seen me on Peacock’s Snoop and Martha’s Very Tasty Halloween or as the winner of Food Network’s Best Baker in America, Season 3, but before television and tasting spoons, there was my Nana.

I grew up in a small Pennsylvania town, baking beside her from scratch and sneaking chocolates from her secret stash. Every room in her home had a candy dish, but the chocolate was always hidden, something to be savored, never taken for granted. That reverence for chocolate, for small joys made with care, is what drives me today.

Crafted in Nano Batches

Each Stache Chocolate creation begins with small-scale precision nano batches, made by hand from bean to bar. Working in these ultra-small quantities gives me the freedom to experiment, to let each cacao origin shine, and to capture fleeting moments of flavor that can’t be mass-produced.

Every roast, every grind, every pour is done in-house, a process guided by touch, taste, and intuition rather than machinery or speed. The result is chocolate that feels alive: nuanced, complex, and deeply personal.

Inspired by the Seasons

Just as a chef cooks with what’s fresh, I craft chocolate inspired by the seasons pairing each cacao origin with ingredients that reflect the time of year. Bright and fruity in summer. Spiced and comforting in winter. Limited by design, each creation tells the story of a moment in flavor.

These seasonal pairings are an invitation to pause and savor, to taste chocolate not as a constant, but as something evolving a reflection of nature, craft, and imagination.
